FOOD STORAGE WITH NITROGEN
The packaging technology in a protective atmosphere of nitrogen is a modern method of preserving foods, it is practical, simple, safe, economic and easy to apply, and it is now widely recognized with the acronim * MAP: Modified atmosphere packaging.
Nitrogen is an inert gas that is directly injected into bags or in rigid containers through nozzles, to a pressure of 1.5 bar, the residual pressure in the pack, after welding, is the default for the product to be packaged and the result we want to obtain.
During the gas injection, a part of this, comes out of the bag and enters the bell of the containment process, so the real gas consumption for each cycle can be estimated equal to the volume of the bell at the same planned pressure.
Nitrogen replaces the air in the packaging, it prevents from crushing and products deformation under the effect of "sticking" to each other inside the box (sliced), it also prevents discoloration of the product. It doesn't carry out germs killing or direct antifungal, but it prevents the development of harmful micro-organisms for the product.
